Matnakash, an Armenian carb, is known for its fluffy texture and means "drawn by fingers," referencing the decorative imprints made by the baker on the loaf's surface.
Making lavash around the tonir is one of the most iconic moments in Armenian culture, and it nearly always involves women. The dough must be stretched into shape over a straw-filled cushion, known as a rabata, and then smacked onto the wall of a flaming hot tonir in order to produce the necessary paper-thin consistency. Yes, onto the oven's hot wall, where it adheres and cooks.
